The Oatmeal Baked

This baked oatmeal recipe is my favorite breakfast right now. I like how it can feed a large party for a special breakfast or brunch, but it can also be made on the weekend and reheated for busy mornings throughout the week. 

This blueberry baked oatmeal is packed with nutritious ingredients like fresh fruit, almond butter, and whole rolled oats, yet it tastes like a pleasure. 

The topping is toasty and nutty, with a layer of nuts and coconut flakes that crisp up nicely in the oven. The middle, on the other hand, remains soft and creamy,  

providing each bite with a delightful variety of textures. It's gently sweet, pleasantly spicy, and speckled with juicy blueberries throughout. Go ahead and get another slice. 

Oatmeal, of course! Please use whole rolled oats only! Quick oats produce a mushy texture in baked oatmeal, whereas steel-cut oats do not soften after baking. 

If you want to make this recipe gluten-free, make sure you use certified gluten-free oats. Mashed banana - for sweetness. It also lends this recipe a subtle banana bread flavor, which I enjoy.

Unsweetened almond milk - or whatever milk you choose! My own oat milk would be ideal here. 

Almond butter - Many baked oatmeal recipes ask for eggs to bind the oat mixture, but I prefer to use nut butter instead. It makes this recipe vegan while also giving the oats a deep, nutty flavor.
